Foundation of the Bodega Conde Sicilia:
In the year 2007, the Bodega was built. It is built into the mountain where both the fermentation bay and the bottling bay connect to the wine maturing bay. They have been excavated from natural caves which is ideal for maturing the wine, as the temperature remains stable at 19º C all year round and has an added benefit of being in permanent silence and darkness.
The Bodega also has a large patio, a laboratory, an office and a small BAR which is also excavated from a natural cave, which makes a friendly atmosphere to taste and enjoy the wines.
Processing of the wines:
The care and attention to the details of each phase is very strict. The strictness in the processing of these wines begins with the bunch of grapes, that have to be controlled to detail and the grapes are not picked if the temperature is less than 13° C.
The number of vines per hectare is 2,500 and they need a very careful system of pruning when green to control the amount of bunches so that in the end each vine has an adequate, concentrated production, each containing the essential minerals and nutritious elements that come from the ground.
Following the same standard of precision, the harvesting of the grapes is carried out, according to the degree of maturity of the bunch of grapes. Harvested by hand they are taken to the Bodega in case of 20 kilos
Fermentation:
The alcoholic fermentation usually takes about 15 days and the maximum temperature that can be reached is 32º C. The very best matured grape harvest and the alcoholic grading that oscillates between 13% and 14½% brings out the best colour and tannin. The fermentation takes place in rust proof steel vats, then passes through the malolastica stage of fermentation and finally the wine goes into oak barrels and rests in the maturing bay.
Bottling:
After completing all the requisitions needed it goes to the wine bottling plant. The wine is bottled in bottles of 0,75 litres where it stays until it is fully matured.
Tasting:
Good wine needs to breathe and let out its aroma. There are many aromatic mixtures depending on the ground, the climate and the variety of grapes used in our wines which will be on the market in 2008 with the name of ORO ROJO. The aroma is fruity and oaky.
In the bodega they organise enjoying and tasting of our wines and moreover whilst enjoying the taste one can enjoy the panoramic views and take in all the surroundings.
